Stuffed Avocado with Quinoa
Avocado is definitely one of my favorite foods to eat! I will seriously just cut it in half and scoop it up with a spoon and eat in plain! Super yummy to me! On Instagram, I came across an idea for stuffed squash. Then the idea hit me…how about stuffed avocados! And luckily I had just bought a few the day before so I was set…and thus the Pinterest search for ideas began ; )
Since the idea was so spurt of the moment, I didn’t have all the ideal ingredients that I would normally put plus I was also overdue for a grocery trip at that time, so I just worked with whatever I had. And here is what I came up with!
Like previous quinoa recipes I have posted, you can always put anything…whatever you want in your avocados…it doesn’t have to follow anything specific. My avocados were also small ones, so I couldn’t fit a whole bunch of ingredients into them.
But I ended up using: quinoa, some leftover ground turkey meat, garbanzo beans, diced tomatos, and feta cheese. Since I’m only making this for myself, I didn’t really measure out concrete amounts. I just eyeballed it and picked how much I would preferably want.
First I my avocado into two halves and pulled out the seed. I scooped a little of the avocado out as well to make some more room for stuffing. I put the scooped out avocado in a separate small bowl to save for later. I already had some quinoa cooked up and stored in the fridge from earlier in the week, so I warmed some up in a small bowl. I then mixed in the chick peas, diced tomatoes, and turkey with the quinoa. I then filled the avocado halves with mix. And I sprinkled some feta cheese on top and popped them into the oven that was preheated to 350 degrees for 15 – 20 minutes. Let it cool for a bit once it was out, and enjoyed : )
And of course I would never let any of the extra avocado go to waste, so I spread it onto a slice of rye bread, sprinkled some sea salt and ate this as a side.
It’s also a great snack between meals! So yummy, healthy, quick, and easy!!
